Le Cordon Bleu - Practical #16

Practical #16 was the first chance to engage my new, slowing down mentality. I would find myself getting worked up in a tizzy of speed and had to consciously slow myself down. That was hard. It seems as though I have one speed in the kitchen. And that is full-steam ahead.

I need to ask myself whether or not the final product was worth the slowed speed.

Yes and no.

Yes, because I didn’t make any grave mistakes. Everything was given the proper attention and care. And my stress level remained low.

No, because the final product was still under-salted and needed more reduction. In other words, the same result as if I would have kept my natural pace.

The stress level. Kept at a bare simmer. May be worth it though. I was calm, yet focused. Slower, but productive. Ultimately smoother.

We’ll see what happens in the next practical.
