Last night was my practical for the poached chicken with rice and sauce suprême.
After working diligently here is what the chef told me.
“La sauce ... est parfaite. Bien assaisonnée. Le riz est bien cuit. Le poulet, parfait. Bravo monsieur.” (The sauce…is perfect. Well seasoned. The rice is cooked well. The chicken, perfect. Well done sir.)
Then after the chef shook my hand I cleaned my station and prepared to go home. Well done. I was pleased. After my previous practical where my sauce was too thin. And the fish over-peppered. I needed a good rebound. And I got it.
Unfortunately, or fortunately, the first three practicals are not graded. My next practical, practical #4, tomorrow, will be the first official grade. Yikes!
